Salad

Here's our very famous Indonesia rojak, which has been tested and tasted by many. It's simple, tasty and is healthy.

You need:-

INGREDIENTS A: 300 gm roasted peanut (remove skin)

B: 250 gm gula melaka (chopped into small pc)

C: 3-5 nos chilli padi

D: 100 gm assam paste ] mix together and

100 ml boiled water ] remove seed

a pinch of salt ]
E: 1/4 section turnip

1/4 section pineapple

1 cucumber

1 no green apple (cored)

METHOD:

1) Process A in MAGIMIX (fitted with SABATIER BLADE) for awhile add

in B, C and D (with machine running) till bind, remove SABATIER

BLADE and change to the SLICER/GRATER DISC place E thru feed

tube to slice in all the fruits .

2) Rojak is ready.

It's such a tasty salad and yet we do not have a color picture for you to view, nevetherless the next time when I make it I will take a step to step picture.

Mother's day semi hands on class

It was a fun Saturday afternoon where 17 ladies took up the semi hands on class held in our Puchong Cookshop. These ladies were having so much fun and at the end of the session they took back their creation.

Physical Classes and Training on Baking

Baker's One objectives to provide education and career opportunities as well as ignite a passion for baking as a career especially the young and hope to encourage students who show passion and interest in baking to realize their potential and to secure a brighter future.

Baker's One offer a comprehensive host of courses to both School leavers and practitioners in the baking industry.

Our leisure classes/workshop are designed to make cooking accessible, easy and fun for novice as well as advance chefs , so students of any culinary ability and background are welcome!

The Founder

About Gina (founder of EKS and Baker's One)

I started to attend cooking classes at the age of 17 mainly on Chinese cuisine, Dian Xin and very little about baking.

In 1984 I joined a company specialize in Swiss cookware as a sales demonstrator. It's the beginning of my career in this industry, working with this company for a year in Singapore I was transferred to Malaysia as an Advertising and Promotion executive. My duty is to train sales demonstrator and personnel, impart product knowledge, the right presentation skills.

I was given the opportunity to work with chefs from renowned hotel, restaurant and also food columnist from Hong Kong, Malaysia and Singapore in converting their long tedious traditional recipes to a easy cooking concept.

Then come EKS the whole market changes from cooking to baking but with my experiences developing recipes is not a task. It is a wonderful experiences, it gives me the opportunity to develop myself into this field.

Beside this new experiences and extensive members base my recipes has increase tremendously and it range from bread, cakes, pastry, tarts etc.

Today being the Business Development Director for EKS and Baker's One not only I take care of the business development. I have been attending baking/cooking courses to upgrade my knowledge and fine tune my skill in these industries.

A Bountiful Of Golden Blessing Cake

To usher in The Year Of The Rat is truly oriental style. So I decided to share this recipe with the concoction of lotus root and black raisin.

My mother (a typical Cantonese) will definitely make lotus root soup for our reunion dinner because to her lotus root in Cantonese is 'lin ngo'the auspicious phrase is ' lin lin yao' meaning A Abundance or A bountiful. So I will name this cake..."A Bountiful Of Golden Blessing Cake".

 Ingredients:-

  • A: 3 egg white (grade A)
  • 1/4 tsp cream of tartar
  • 60 gm castor sugar
  • B: 180 gm salted butter
  • 60 gm castor sugar
  • C: 3 egg yolk
  • 1/2 tsp vanilla essence
  • D: 168 gm superfine flour (cake flour) [sieve 1/2 tsp baking powder together]
  • E: 60 gm lotus root (grated) ] Mix with..
  • F: 60 gm black raisin (soaked 1/2 hr and drain) 
  • 20 gm superfine flour
  • Line 7" square tin with baking paper

 

METHOD:

1) Whisk A until soft peak, remove.

6) Bake at 180 degree celsius for 40-45 min

Super Easy Way of Making Muffin

Today, we will be making some muffin. It's so easy to make these muffins (especially, when we use Baker's One Muffin Premix) :-

 You need:
A: 3 whole eggs
B: 200 ml fresh milk
C: 1 packet Baker's One Blueberry Muffin Mix
D: 175 gm melted butter or corn oil

Method:

1) Whisk A (eggs) for 1 min

 

2) Add B (milk) (with machine running)

3) Add C (muffin mix) gradually (with machine running)

4) Lastly add D (melted butter)

5) Fill muffin pan (lined with paper cup) or muffin cup (3/4 full) , put to bake in
preheated oven at 180 degree celsius for 20- 30 min

And you have delicious homemade muffin!

NOTE:
CAKE MIXER USER: Whisk egg, muffin mix and milk for 5-8 min at medium speed, reduce to low speed add melted butter whisk for another 1 min.

Baked Choco Biscuit Cheese Cake

This oreo cheesecake recipe is so easy, yet so tasty! The incredible goodness of oreo cookies is the ingredient that makes this cheesecake so sinfully delicious. Kids and adults love this cheesecake!

Ingredients for Base

A: 120 gm oreo biscuit (net weigh)
B: 60 gm unsalted butter (melted)
1/2 tbsp honey

Method:

1) Process A until fine add B and press into a 7" loose base tin (lined mix until bind with parchment paper). Then chill for 1/2 hr.

Ingredients for Filling
A: 2 egg whites
1/4 tsp cream of tartar
20 gm castor sugar
B: 250 gm cream cheese
20 gm castor sugar
C: 2 egg yolk
1/4 tsp vanilla essence
1/2 no lemon juice and rind
D: 70 gm whipping cream
E: 20 gm corn flour
F: extra oreo biscuit


Methods:

1) Whisk filling A till soft peak, remove.

3) Add C gradually and process until smooth

4) Add D, E lastly fold add in A

5) Remove tin from the refrigerator, wrap the base with foil.

6) Pour in very little cheese mixture,place oreo biscuit on the side of the tin. Pour in more cheese mixture, place oreo biscuit onto the cheese filling, top with the remaining cheese mixture and finish off with oreo biscuit.

7) Place tin into a dripping pan filled with water, transfer to preheated oven temperature 150 degree celsius - steam bake for 55 min or until cake is firm. Leave cake in oven with door ajar for 10 min, remove leave to cool.

8) Chill for 3 hrs before serving.

SEMI HANDS ON DUMPLING CLASS IN KUALA LUMPUR

Dumpling festive is round the corner and I had a very interesting lesson for my students in Kuala Lumpur.

In the workshop students were taught step by step in wraping the glutinous rice with fillings.  Here's the picture of the dumpling

To share with you one very traditional recipes - ALKALINE DUMPLING or we call it in cantonese 'kan sui zong'  You can eat it on it own, some would add icing sugar.  For my mum I remember she would cut the dumplin into slices and panfry it and serve with light soy sauce and pepper.

For me I love to eat it with gula melaka syrup (it like eating the Malay kuih).  You will love it too.

INGREDIENTS:

A              : 500 gm           glutinous rice (soaked for 2 hours, drain dry)

B               : 1 tbsp             alkaline (lye water)]

                    1 tbsp            cooking oil                 ] add to A, mix evenly

                     1/4 tsp          salt                               ]

C              :   30 pcs           bamboo leaves

                     some hemps

GULA MELAKA SYRUP

Boil 40 gm sugar, 250 gm gula melaka and 3/4 thick coconut milk (extract from 1 coconut)

METHOD

1) Soaked bamboo leaves and hemps for 3 hrs and boil till soft (approx 30 min).  Remove and wash leaves.

2) Fold 1 pc leaf into cone shape,  place 1 tbsp rice, wrap up and secure with hemps (make in bundle of 10 pcs)

3) Boil enough water in pot, place dumpling into water cover with lid and boil for 2 hrs.

PS: Those with pressure cover you can boil for 1/2 hrs
